Smoked Salmon Roll Ups with Citrus Soy Sauce

I made these smoked salmon roll ups with citrus soy sauce as an appetizer to go along with our spicy shrimp stacks the other night. These were absolutely delicious and I am definitely making them again with a few small changes. 

These rolls start with smoked salmon, then a layer of cream cheese flavored with lemon and scallions.  Some julienned cucumber and avocado get rolled inside and then the roll is sliced and topped with everything bagel seasoning and a citrus soy sauce. 

The combo of smoked salmon and cream cheese is classic, but add in the everything seasoning and the citrus soy sauce and scallions and you have something amazingly tasty. I used TJs everything but the bagel seasoning on these (link of my Favorite Item Links page). 

My only minor complaint with these was that I felt there was a bit too much cream cheese relative to the other ingredients. I would increase the cucumber/avocado inside next time and use a thinner layer of cream cheese.  These would also be fantastic as a crostini.

Smoked Salmon Roll Ups with Citrus Soy Sauce

These rolls start with smoked salmon, a layer of cream cheese flavored with lemon and scallions.

Ingredients
  

For the rolls:

  • 8 oz smoked salmon
  • 1/2 cup whipped cream cheese I'd use 1/4 cup
  • 2 tbsp scallions thinly sliced
  • 2 tsp lemon zest
  • 1 Persian mini cucumber julienned
  • 1 avocado thinly sliced
  • everything bagel seasoning

For the sauce:

  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1 tbsp water
  • 1 tbsp scallions thinly sliced

Instructions
 

  • Combine the sauce ingredients and set aside.
  • Mix the cream cheese, lemon zest, scallions and a pinch of salt and a bowl and stir until well combined.
  • Lay a piece of plastic wrap out on your counter and line with smoked salmon pieces to make a rectangle shape. Overlap the pieces so it will stay together.
  • Spread with cream cheese and then place the cucumber and avocado in a line long ways so you can roll them up inside. Use the plastic wrap to roll the salmon around the filling and wrap tightly. Place in the freezer for 20 minutes to firm it up for slicing and then slice into rounds. Sprinkle with everything seasoning and drizzle with the sauce and serve.
