
My daughter saw this strawberry version of tiramisu on IG and wanted to try it. It was easy to make and really tasty. There are a few minor things I’d change if I make it again, but overall it was a tasty recipe.  It has layers of lady fingers soaked in a strawberry liqueur syrup, mascarpone cream, fresh strawberries and it is topped with some freeze dried strawberry powder. 
I loved the mascarpone cream in this. It has a little lemon added to it and if I made it again I would also add some freeze dried strawberry powder to it in order to up the strawberry flavor in this.  I also thought the liquor flavor was a bit strong (I know shocking for me), so if I made again I would halve the liqueur and replace the rest with simple syrup. 

You also can’t have too many fresh strawberries, so I thought this could have a bit more chopped fresh strawberry in it. You need to make this the night before you want to eat it, so it can sit in the fridge overnight to let it all come together and soften the lady fingers. Overall, really yummy and I will be eating some more of it tonight! 

Strawberry Tiramisu
Ingredients
Strawberry Syrup:
- 1/3 cup strawberry jam
- 1 cup strawberry liqueur I used cherry b/c I didn't have strawberry and would use half as much liqueur next time and sub some simple syrup for the other 1/2
Mascarpone Filling:
- 2 cups mascarpone cheese
- 1/2 cup powdered sugar divided
- 3 tbsp lemon juice
- 1 tsp vanilla
- 1 3/4 cup cream
To assemble:
- ladyfinger cookies how many depends on the pan size, I used about 36 for a 9×13 pan
- 1 cup chopped fresh strawberries I would up this a bit more next time
- 1/2 cup strawberry jam
For the top:
- Freeze dried strawberry powder to decorate
Instructions
- Combine the liqueur and jam to make the syrup. Microwave for 30 seconds to melt the jam and whisk and set aside.
- Add the mascarpone and 1/4 cup powdered sugar along with lemon and vanilla to a mixer bowl and whisk until well combined. Transfer to a large bowl and clean the mixer bowl. Add the cream and the 1/4 cup powdered sugar to the bowl and whisk until you reach soft peaks. Fold the cream into the mascarpone mix and set aside.
- Dip the lady fingers into the syrup and place in whatever pan you are using. You can use less lady fingers and make a 9×9 pan but I did a 9×13. Scoop 1/2 the mascarpone cream over and spread it out. Heat the 1/2 cup jam briefly in the microwave until it can be drizzled and drizzle it over.
- Cover with the chopped fresh strawberries and then the rest of the cream. Use some freeze dried strawberry powder to decorate the top however you like. Place in the fridge overnight, then cut into squares and serve.
