
Loaded mashed potato meatloaf pie is a meatloaf take on shepherd’s pie with a loaded potato topping. The meatloaf recipe was interesting and had a few things I don’t normally add, but really loved. The mashed potato topping was exactly what you’d want from a loaded potato (although sadly the bacon I got from the store was moldy so my picture doesn’t show any, but you should definitely add some).
I loved that this all cooked in one dish and I didn’t have to cook any components first. I was hesitant about putting raw onion into the meat mix, because I usually sauté mine first but it was fine. This meatloaf mix has some cottage cheese it in, as well as some bbq sauce. I have never used either in a meatloaf and I have to say it was delicious. The bbq sauce was not enough to make the whole thing taste like bbq, it just added a deeper flavor to the meatloaf.

If I had any, I would definitely top this sliced scallions or chives…unfortunately I didn’t have them when I made this, but they would be a great addition. It was pretty tasty just the way it was too though. This is another one we will be excited to eat as leftovers. 🙂

Loaded Mashed Potato Meatloaf Pie
Ingredients
For the meatloaf:
- 1 1/2 lbs ground beef I used 85/15
- 1/2 cup finely chopped onion
- 4 garlic cloves minced
- 1/2 cup seasoned bread crumbs more if needed
- 1 tbsp Worcestershire sauce
- 1 large egg
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- black pepper to taste
- 1/3 cup cottage cheese
- 1/2 cup bbq sauce
- 2 tbsp ketchup
For the potatoes:
- 2 lbs russets peeled and diced into chunks
- 1/2 cup unsalted butter I used 1/4 cup
- 1/2 cup sour cream
- milk or half and half as needed
- salt to taste
- 1 cup shredded cheddar cheese divided
- 1/4 cup chopped bacon
For topping:
- extra chopped bacon
- sliced green onions or chives
Instructions
For the meatloaf:
- Combine all the ingredients in a bowl and mix well, without compressing the meat too much. Preheat the oven to 375 and spray a 13×9 pan or a deep dish pie pan with cooking spray. Prep your potato mixture while you bake the meatloaf.
- Press the meat into the pan and bake for 20-30 minutes depending on the thickness of the meat. You want it to be mostly cooked.
For the potatoes:
- Place potatoes in a pot of salted water and bring to a boil. Continue cooking at a low boil until very tender. 20-30 minutes depending on the size of the chunks. Mash the potatoes with the butter, sour cream, and enough milk to make them creamy. Add salt to taste and then mix in 1/2 cup shredded cheddar and the bacon until it is mixed in.
To finish:
- After the meatloaf has mostly cooked, remove the pan from the oven and spread the mashed potato mixture over the top. Top with the other 1/2 cup of cheese and bake another 15-20 minutes until the potatoes are hot and the meatloaf is fully cooked through. Top with extra bacon and scallions or chives and serve.
