
This cocktail is another variant of the midnight marauder no. 2, this version made with mezcal, bonal, cynar and mole bitters for a chocolatey profile not unlike mole sauce. I’m a huge fan of mole and we have the bitterman’s mole bitters (check my favorite items page for link) used in this, so I was excited to try it.
I didn’t have bonal, so I looked up substitutes and ended up using peach liqueur. You can also use a sweet vermouth or lillet in place of it. This drink had a deep flavor profile and was sweet, but not too sweet and it was easy to drink.

Midnight Marauder
Drink featuring mezcal, bonal, cynar and mole bitters
Ingredients
- 1 oz mezcal
- 1 oz bonal or peach liqueur, sweet vermouth or lillet
- 1 oz cynar
- dash of mole bitters
Instructions
- Combine ingredients in a cocktail shaker with ice and shake until cold. Pour into a chilled nick and nora glass (I didn't have that so used a martini glass).
