We are having pulled pork sandwiches for the 4th, and I decided to make King Arthur Flour’s Beautiful Burger Bun recipe for us to eat them on. I made the onion version, which just has a bit of onion flavor to them.
These buns are easy to make and they really are exactly what you want in a burger or sandwich bun. Soft, but sturdy enough to hold up, lightly sweet, and golden brown, they really elevate whatever you eat on them. I have a tutorial on baking yeasted dough here, if you are new to it. As with any yeasted though, these need rising time, so you need to set aside a couple hours to make them, but it is almost all passive time where the dough is rising.
I bake all my rolls, cookies etc on parchment lined baking sheets because it make cleanup so much easier. You can find a link to these precut parchment sheets on my Favorite Item page.

King Arthur’s Beautiful Burger Buns
Ingredients
- 1 cup water room temp
- 2 tbsp melted and cooled butter or softened is ok too
- 1 large egg
- 3 1/4 cups AP flour
- 1/4 cup sugar
- 1 tsp salt
- 1 tbsp instant yeast
- 1 tsp onion powder optional
- 1/2 tsp dried onion optional
Instructions
- Mix and knead all of the dough ingredients — by hand or mixer, until you have a soft smooth dough. Make sure it passes the windowpane test. If the dough seems too dry while mixing, add a tbsp of water at a time until it is soft and supple. If it is very sticky and loose, add a tbsp of flour at a time until it is the right consistency.
- Move the dough to a greased rising container and allow to rise for around an hour, or until it doubles.
- Divide into 8 pieces and shape into balls. There are a few ways to do this, look on youtube for a roll shaping video if you haven't done it before. Place the 8 balls on a parchment lined baking sheet and cover with greased plastic wrap. Allow to rise another 30-40 minutes, until well risen. When you lightly press on a roll, it should leave a dent that doesn't bounce back right away.
- Preheat the oven to 375 and bake for 12-16 minutes, until nicely golden. Cool on a rack.
