
I know cucumber in a cocktail might sound kind of odd. I would have thought so too, but a few years ago we went to a local distillery near us that makes an amazing cucumber vodka and I have been hooked ever since. It is actually very refreshing and brings an earthy note to cocktails that I love.

This recipe uses a super easy to make homemade cucumber/ginger vodka by blending seedless mini cucumbers and fresh ginger with some vodka and straining the mash. I love the color this gave to the drink. You can store the cucumber vodka in your freezer if you make more than is needed. This is a simple combination of the cucumber ginger vodka, simple syrup and lime juice. This was really light and tasty and refreshing and went down very easily 🙂

Cucumber Lime Vodka Cocktail
Ingredients
- 2 mini seedless cucumbers
- 8 oz vodka
- 2 inch piece fresh ginger washed – no need to peel
- 3/4 oz lime juice
- 3/4 oz simple syrup
Instructions
- Blend the cucumber, ginger and vodka in a blender until smooth. Pour through a fine mesh strainer, pressing the mash to get the liquid out. Store in the freezer until use.
- Mix 1 1/2 oz of the vodka you made with the lime juice and simple syrup in a cocktail shaker with ice. Strain into a chilled glass and serve.
