Garlic Blue Cheese Pull Apart Rolls

I did SO much cooking over the holidays, but I took a break from posting about it to spend more time enjoying it with my family 🙂 I made some tasty things I can’t wait to share though. One of the top favorites this holiday was this garlic blue cheese pull apart bread. We could not stop eating this and my kids said it was one of the top bread items I have every made – high compliments from them. I had to promise to make it often, and I will.

This recipe is super easy – you can make it with store bought pizza dough if you don’t want to deal with making your own dough. I used my garlic knot dough, but my mom tried making it with pizza dough as said it was just as good as I said it was, so either works.

I adapted the original recipe slightly to add some parmesan as well as the blue cheese, but you can do it either way. With my garlic knot dough this made 2 8 inch round pans. You can easily make bigger or smaller amounts by adjusting how much cheese you top it with. This was really good even cold out of the fridge left over and every bit got eaten here 🙂

Servings 8 servings

Ingredients

  • 1 lb store bought pizza dough or use my garlic knot dough
  • 6 tbsp unsalted butter melted
  • 7 oz blue cheese crumbles
  • 1/4 cup grated parm
  • 6 cloves of garlic minced finely
  • chopped parsley for the top

Instructions

  • If you are using my garlic knot recipe for the dough, prepare the dough and allow to rise as instructed, then when you reach the point of shaping, follow this recipe from that point on.
  • Preheat the oven to 375 and grease 1-2 9 inch round pans or any other baking dish you like that will snugly fit the amount of dough you are using. Divide the dough into small pieces and roughly shape them into balls. Using my garlic knot dough, I used 16 pieces per pan, so 32 total. If using the 1 lb of pizza dough, make about 20 balls. It doesn't really matter what size or how many, you just need to watch the baking time if they are smaller because they will bake faster.
  • Melt the butter in a bowl and mix the blue cheese, garlic and parm in another larger bowl. Dip each ball into butter then into the cheese mix, gently pressing a bit of cheese into the dough. Don't worry if half falls off, you will put the leftover on top in the pan.
  • Repeat with all the balls, placing them spaced evenly in the dish, nearly touching but with a little space in between. When you have done them all, use the remaining butter/cheese mix and put over the top. Cover with greased plastic wrap and allow to rise 30-45 minutes until they are puffy and touching.
  • Remove plastic and bake for 18-20 minutes, keeping an eye on them as they will bake differently depending on size and your dish. You want the bread nicely golden but not burnt. If you have an instant read thermometer the bread in the center should be 200 when done. Remove from the oven and allow to cool slightly before serving.
