The barracuda cocktail is a rum based drink with a sweet and fruity profile. The addition of Galliano liqueur gives this drink an herb and vanilla note that makes for an interesting drink. Pineapple juice is typically used here, but I substituted tangerine juice as I’m not a huge fan of pineapple juice cocktails. I loved this change, and these went down easy.
A small amount of lime juice adds some acidity and dimension to an otherwise relatively sweet drink. I increased the amount of lime juice in order to offset the fact that I didn’t use pineapple juice. Gold rum is suggested for this drink.
