
In this marinated tomato and feta salad, juicy tomatoes are marinated to perfection with briny capers, tangy pepperoncini, and thinly sliced onion in a bold mix of olive oil and red wine vinegar. Crumbled feta adds a creamy, salty bite, while a pinch of red pepper flakes gives just the right touch of heat. Finished with herbs, this bright, fresh Mediterranean salad is a vibrant side or a standout on its own.
I love this salad! It is such a great side dish for any protein. There are a million ways you can customize it too. You could add some kalamata or other olives, lots of fresh herbs are definitely a must if you have them. A cucumber would also make a great addition. Use good quality olive oil and vinegar here if you can, as it makes a big difference to the flavor. I absolutely love the garlic olive oil and red wine vinegar from Fustinis.

Marinated Tomato and Feta Salad
Ingredients
- 4 large ripe tomatoes Ideally heirloom or vine ripened or garden
- 1 small onion or red onion thinly sliced
- 2 tbsp good olive oil
- 2 tbsp red wine vinegar
- salt and pepper
- 1/4 cup feta cheese
- 1/4 cup pepperoncini rings
- 1/4 cup capers
- 1/2 cup fresh basil, parsley, cilantro chopped, one or a mix – optional
- 1 tsp dried italian seasoning
- sprinkle red pepper flakes
Instructions
- Combine the tomatoes and sliced onions with all of the dressing ingredients and stir well. Add the feta and gently toss. Place in the fridge and allow to marinated for a few hours, stirring once or twice. Taste for salt and pepper and adjust as needed then serve.
