Cobb Salad with Shallot Vinaigrette

Cobb salad

This Cobb salad with shallot vinaigrette is a vibrant, satisfying mix of crisp lettuce, juicy tomatoes, creamy avocado, smoky bacon, crumbled blue cheese, and perfectly cooked hard-boiled eggs. It’s all brought together with a bright, tangy shallot vinaigrette made with champagne vinegar and finely minced shallots for a touch of elegance. Fresh, balanced, and full of bold flavor, it’s a perfect main dish salad for lunch or dinner.

I love a Cobb salad and this one is extra tasty because of this dressing. I love the combo of champagne vinegar and shallot. You could also use white wine vinegar instead if you don’t have champagne. We also added some olives to this since we love them. Using deli ham and turkey make this a quick meal, but you could sub some cooked chicken here also. Check out my full list of salads here. Many of them are great for dinner.
