
Masala Fried Eggs are a flavorful twist on breakfast eggs! Chopped shallots, fresh ginger, garlic, and spicy chilies are sizzled in butter, then dusted with fragrant garam masala before eggs are cracked right into the pan and cooked until perfectly set. Served hot with soft, warm naan for dipping — it’s rich, savory, and full of bold Indian-inspired flavors.
I love using eggs for dinner because they are so versatile and quick. I’ve made a million egg dishes and I really loved this one. The flavors are so interesting and the runny yolks are great with naan. I served this with a simple salad, but I think it would also be really good along with some vegetable curry or roasted vegetables.

Masala Fried Eggs
Ingredients
- 4 tbsp butter
- 2 small shallots finely chopped
- 2 inch piece fresh ginger peeled and minced
- 4 garlic cloves minced
- 1/2-1 tsp garam masala start with 1/4 tsp and work up to preferred spice level
- 1/4 tsp turmeric
- 1/2 tsp garlic powder
- 1 jalapeno minced
- 4 large eggs
- cilantro for topping optional
- buttered naan optional
Instructions
- In a non stick skillet over medium heat, melt the butter. Add the chopped shallot, garlic, ginger and chili and cook, stirring occasionally until softened.
- Sprinkle the garam masala, turmeric, garlic powder and some salt and pepper to taste over the mixture. Taste and adjust the seasonings. Make space for the eggs and crack them into the pan. Reduce heat to low and cover the skillet. Cook until the egg whites are set and the yolks are cooked the way you like them.
- Serving with hot naan and a vegetable or salad on the side.
