Today was another day that one of my kids had something going on in the afternoon and I knew I wouldn’t have a lot of time for dinner. This weekend I whipped up a double batch of my favorite sandwich rolls, so I decided to do an easy club sandwiches with avocado for dinner tonight. Classic club sandwiches are served on white bread, but I love the chewiness of these rolls and they work great.
I have hugely partial to Boar’s Head deli meat. Their meats are consistently higher quality than other brands, so that is my go to for deli turkey if I can get it. Smoked turkey seemed like a perfect choice for this sandwich. It isn’t traditional to put cheese on a club sandwich, but I could not resist some sliced aged cheddar on these.
I have talked before about my favorite oven cooking method for bacon – see that technique in my post on the yummy bodega sandwich. This method is so easy and so much less mess than cooking bacon on the stove top. The bacon gets so perfectly crispy and evenly cooked.
I did put a thin layer of mayo on these, as well as the ripe avocado mashed with some garlic salt. You could also add mustard if you like, though it isn’t typical on a club. I also added some romaine lettuce since I had some in the fridge.
These club sandwiches with avocado were super fast, easy and satisfying. I served these with a quick cucumber and onion salad. They’d also be great with chips or fries, or a side salad.
Club Sandwiches with Avocado
- 1/2 lb sliced smoked turkey
- 4 slices cheddar cheese
- 8 slices bacon cooked crispy
- 2 ripe avocados
- garlic salt to taste
- pepper to taste
- mayo to taste
- 4 sandwich rolls or other bread
- romaine lettuce leaves
- Cook the bacon by your preferred method and drain on paper towels.
- Put a little mayo on your bread or rolls. Mash the avocado with some garlic salt and pepper to taste and spread on the roll as well.
- Add the turkey, cheese, bacon and romaine and serve!
