
This healthier version of a taco salad has Mexican spiced ground turkey breast, lots of veggies, black beans, and a delicious jalapeno garlic lime dressing that really adds tons of flavor.
I used both romaine and green leaf lettuce in this salad. Green and red leaf lettuce have more nutritional content than romaine does, so it is great to use those if you can. You can spice your turkey breast to your taste. I used chili powder, garlic powder, onion powder, coriander, cumin, ancho chili powder, smoked paprika and salt and pepper.
Any veggies that go with a taco salad could also be used here. I did tomatoes and red pepper along with the black beans but you could also add corn, avocado, carrot, etc.
Greek yogurt is the base for the dressing, which also has garlic, cilantro, jalapeno and spices, as well as vinegar to give it a lot of flavor. I liked this salad as a tasty and healthy dinner option.
Turkey Taco Salad with Jalapeno Lime Dressing
Ingredients
For the salad:
- 2 tbsp olive oil
- 1 lb ground turkey breast
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1 tsp ancho chili powder
- 1 tsp coriander
- 1 tsp cumin
- salt and pepper to taste
- 1/2 cup cilantro chopped
- 6 cups lettuce
- 1 can black beans drained and seasoned as you like
- 1 red pepper diced
- 1/2 red onion finely diced
- 1/2 pint cherry tomatoes halved
- 1 cup shredded cheese
For the dressing:
- 1 cup 2% greek yogurt or reduced fat sour cream
- 2 tbsp lime juice
- 1-2 tbsp white vinegar
- 1 jalapeno seeded and diced
- 1 large clove garlic
- 1/4 cup cilantro
- salt and pepper to taste
Instructions
For the dressing:
- Combine the ingredients in a small blender jar and puree until smooth. Add a little water if needed thin it out and season as desired.
For the salad:
- Add the oil to a skillet over medium heat. Add the turkey and cook, stirring and breaking up the meat. Add all the spices and salt and pepper and continue cooking until the turkey is full cooked. Taste and season more if needed. Set aside to cool down a little while you prep the other salad ingredients.
- Place the lettuce onto plates and top with the veggies, beans, cheese and meat. Drizzle with dressing and serve with extra dressing on the side. I also added some crushed tortilla chips on top.
