
These mini pita breads are the perfect size for making mini burgers. The combination of lamb and pesto is really delicious and I’m not sure why you don’t see it more. This mini burger in a pita is just about the right size for a meal. You could easily make regular beef burgers like this too.
I mixed the ground lamb here with some garlic, onion, fresh marjoram from my garden, dill, salt and pepper as well as a little egg and bread crumbs to bind them. I pan fried the patties on the stove until just cooked through. To make the pesto mayo, I used some delicious pesto olive oil I had, but you could easily mix with regular pesto or just use pesto if you’d rather and leave out the mayo. I also added some chopped basil, salt and pepper to the mayo.

I added some thinly sliced cucumber and shredded lettuce to this mini burger for freshness and crunch. These mini burgers made a quick and tasty dinner!
Mini Lamb Burgers with Pesto Mayo
Ingredients
For the burgers:
- 1 lb ground lamb
- 1 tsp salt
- fresh ground black pepper
- 1 tsp minced fresh marjoram or other herb
- 1/2 tsp dried dill
- 4 garlic cloves minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 egg
- 1/4 cup panko flakes
For the pesto mayo:
- 1/2 cup mayo
- 2-4 tbsp pesto or pesto olive oil to taste
- salt and pepper
For the burgers:
- 6 mini pita bread
- shredded lettuce
- thinly sliced cucumber
Instructions
For the burgers:
- Combine the ground lamb with all of the other ingredients and mix well, but gently. You don't want to overwork the meat. Shape into 6 patties. Heat a tbsp of oil in a skillet over medium high. Add the patties and brown well. Flip and brown on the other side, then reduce heat, cover the pan and cook until cooked through.
For the mayo:
- Combine the ingredients in a bowl, taste, and season with salt/pepper.
To serve:
- Cut off a little bit of the top of the pita to make a pocket. Add a burger patty, some mayo, some lettuce and cucumber and serve with extra pesto mayo on the side.
