
This meal was a last little taste of summer before we move on to colder weather, although here in NC we often have fake fall followed by more warm weather so I probably could fit this one in again before it gets too cold 🙂
This is a really simple supper, but the bbq chicken/ranch salad combo is really good match. You can use any bottled bbq sauce you like here, or use my favorite homemade recipe. We grilled these skewers, but you can also do them in the oven if you aren’t up for grilling.
The salad is a mix of romaine, fresh corn, cucumber, scallions and quick homemade ranch. You could also add some cherry tomatoes, carrots, celery or black beans. It only takes a few minutes to whip up this homemade dressing and you won’t regret it.
BBQ Chicken Skewers and Ranch Salad
Ingredients
For the chicken:
- 1/2 cup bbq sauce
- 1 package chicken breasts cut into bite sized cubes
- salt and pepper
- extra bbq sauce for serving
For the salad:
- 2 ears fresh corn cut from the cob
- 4 scallions sliced
- 3 mini cucumbers sliced
- 8 cups romaine lettuce sliced
For the ranch:
- 1/2 cup mayo or light mayo
- 1/2 cup sour cream or light sour cream or greek yogurt
- 2 tbsp lemon juice or 2 packets true lemon
- 1 tbsp white wine or white vinegar
- 1 tsp salt
- pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp dried dill
- 1/2 tsp dried parsely
Instructions
For the chicken:
- Combine chicken and bbq sauce with some salt and pepper and marinate overnight or at least a few hours. Place chicken on skewers and grill or use the broiler in your oven to cook them until they have some char and are fully cooked through. You can broil first and then reduce the temp to cook the chicken the rest of the way if using the oven.
For the salad:
- Combine the dressing ingredients and taste and adjust the seasonings to taste. Toss the salad ingredients in a large bowl and drizzle with dressing and toss again. Serve along with the chicken skewers.
