We had these pesto chicken wraps for dinner last night, and I ate mine and about 1/4 of my daughter’s wrap :) Pesto is so versatile and you can use it in so many ways (it is amazing on pepperoni pizza if you haven’t tried that). I love how much flavor it instantly adds to a meal.
I had not had the combo of pesto and tzatziki before and I wasn’t sure it would work, but it did. We also added some hot sauce, which was great, but I think harissa would have been even better with this.
This recipe starts with some marinated and cooked chicken, which is then tossed in pesto and wrapped with lettuce, tomato, avocado, feta and tzatziki sauce. These were pretty quick to put together and made a fresh and tasty dinner. Since the chicken in tossed in pesto, I think you could skip marinating it here if you don’t have time, since pesto is so flavorful.
