Curry Chickpea Salad Wraps

This recipe is a version of curry chicken salad, but vegetarian. Chickpeas are so versatile and hearty and they are a great substitute for meat in vegetarian dishes. This curry chickpea salad tastes just like curry chicken salad, just without the chicken. I loved the use of apple and celery for some sweetness and crunch and the chow mein noodles add great texture and crunch too.

This is super easy to make and takes about 5-10 minutes to put together. Nothing needs to be cooked and I loved the simplicity of making these. I used jalapeno cheddar wraps for these, you can also use large burrito sized tortillas. Dried curry powders can vary a lot, so use one you like, and start with a small amount and work up as some are more potent than others.

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1/2 cup chow mein noodles more to taste
  • 1/2 cup toasted cashews
  • 1 cup diced celery
  • 1 apple peeled and diced
  • 1/4 cup diced red onion
  • 1/4 cup cilantro or parsley chopped
  • 1/4 cup mayo
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp curry powder start with 1 and add more if needed
  • 1 tbsp honey
  • 2 tsp apple cider vinegar
  • salt and pepper to taste
  • shredded lettuce
  • 4 wraps or tortillas

Instructions
 

  • Combine the chickpeas, celery, onion, herbs, cashews and apple and toss. In a small bowl mix the mayo with the spices, vinegar and honey and taste. Add salt and pepper and adjust the curry to your liking.
  • Add the chow mein noodles and the sauce to the chickpeas and toss. Line your wrap with lettuce, fill with delicious chickpea salad, wrap and serve.
