Cheddar, Scallion and Chive Pancakes with Fried Eggs

Cheddar, scallion and chive pancakes are a savory take on the usual sweet pancake. They have both cheddar and parmesan cheese as well as the chives and scallions cooked into the batter and they are SO good. I could eat a whole lot of these. 🙂

You could top these with some whipped butter, and that would be amazing, but we chose to top them with some fried eggs for extra protein. The two together were a great combo and I liked the addition of some salad for freshness. This recipe is really quick to make and was a different take on breakfast for dinner that I really enjoyed.

Ingredients
  

For the pancakes:

  • 1 1/2 cups AP flour
  • 1 3/4 tsp baking powder
  • 1 1/2 tsp salt
  • 1 1/4 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sliced scallions
  • 2 tbsp chopped fresh chives

To serve:

  • 4-6 fried eggs optional
  • salad greens optional

Instructions
 

  • Whisk the flour, baking powder and salt in a large bowl. Toss in the cheddar and parm and mix. In another container, mix the egg and milk well. Add the milk mixture to the flour mixture along with the chives and scallions and stir until just combined.
  • Heat a bit of butter in a skillet over medium heat and add about 1/4-1/2 cup batter depending on the size of pancake you want. Allow to cook until the edges are dry and bubbles pop in the center of the pancakes. Reduce heat if needed to keep from burning. Flip and brown the other side. Due to the cheese in these, they will brown a bit more than a standard pancake. That is fine, just don't let them burn. Cook until they are springy in the middle and fully cooked. Remove to a plate.
  • If topping with eggs, fry those up and place a couple pancakes on a plate and top with the egg and some salad.
