These toasted ham and cheese flatbread sandwiches with Dijon, red onion and tomato were inspired by the jalapeno cheddar tuna melts I made on mini naan bread a while ago. I loved the way the naan got a little bit crispy but still had a nice chew and it just could not be easier to make sandwiches this way. These took me a couple minutes to make and cook, so they were a super quick weeknight dinner.
You could completely customize these to your tastes too. I used sharp cheddar cheese, but you could also use swiss, regular cheddar, mozzarella, or whatever you prefer. I added some tomato and red onion to the top, but you could top these with anything else you like that goes with ham and cheese. Next time I will add some capers too I think. I used sliced deli ham here and it worked great. I used mini naan from my grocery store, but you could also use regular size naan for a bigger sandwich and cut into pieces if you prefer.

Ham and Cheese Flatbread with Tomato and Red Onion
Ingredients
- 6-8 mini naan breads
- Dijon mustard
- 8 slices good quality deli ham
- 8 slices sharp cheddar or other cheese
- sliced tomato
- sliced red onion
Instructions
- Heat oven to 425 and line a baking sheet with parchment. Place the mini naan on the baking sheet and spread a good amount of mustard on each one.
- Top with a slice or two of ham and a slice of cheese, then any additional toppings you like. Bake for 10 minutes, and then switch to broil to brown the toppings/cheese a bit more. The edges should be browned and the cheese well melted. Allow to cool for a few minutes and serve.
