
Loaded hummus dip features creamy hummus topped with a fresh mix of diced cucumber, tomato, and mixed olives, finished with crumbled feta, fragrant herbs, and a drizzle of olive oil and balsamic vinegar. Served with crisp pita chips for scooping — a bright, savory dip bursting with Mediterranean flavor.
This dish makes a great party dip or appetizer, or serve it for dinner like I did. I served with pita chips and some falafel and it was such a fresh and tasty meal. You can make your own hummus, it is easy and I have my favorite recipe posted here. Or if you are in a hurry, which I was, you can use any of the great store bought hummus options. I ended up just placing my falafel on top of the dip and it looked great that way.

Loaded Hummus Dip
Ingredients
- 2 cups hummus of your choice
- 1 cup diced Persian cucumber
- 1 cup diced cherry tomatoes
- 1 cup mixed pitted olives
- 1/2 cup crumbled feta cheese
- chopped parsley and/or scallions
- drizzle of good olive oil
- drizzle of good balsamic vinegar
- Pita and pita chips for serving
- falafel (optional)
Instructions
- Spread the hummus in a pie plate or other shallow bowl. In a large bowl, toss the tomatoes, cucumbers and olive mix and season with salt and pepper. Top hummus with this mix, followed by the feta and parsley or scallions. Drizzle with the oil and vinegar and serve with pita chips and falafel.
