Ombre Berry Champagne Cocktail

I love this ombre berry champagne cocktail. It has champagne for one, plus delicious homemade berry syrup. It also looks super pretty and festive with it’s ombre effect and bubbles. I am planning to make this for NYE and tested it out today to make sure it was what I wanted. You can easily make this non-alcoholic too by using sparking water or cider in place of champagne if you want to include the kids or those who don’t drink.

The berry syrup for this is super easy to make. Just combine any berries you like (fresh or frozen) – I used blueberries, blackberries and strawberries with some water and sugar and boil until it reduces and thickens and forms this lovely intense berry syrup.

To serve this drink you simply pour some champagne (or other sparkling beverage) into the glass, tilt to a 45 degree angle and spoon 2 tbsp of syrup against the glass so it slides to the bottom. I was a little skeptical this would work, but it worked amazingly well! If you have some fresh berries you can throw a few in too to make it even prettier.

Ingredients
  

  • 1 1/2 cups berries
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 bottle champagne
  • berries or sprigs of rosemary for garnish

Instructions
 

  • Place the fruit, sugar and water into a sauce pan and boil for about 5-10 minutes until it is dark in color and the fruit has macerated and broken down.
  • Strain syrup through a fine mesh strainer into a heat safe container and chill.
  • When ready to serve, pour champagne into a chilled glass and tilt to 45 degree angle. Spoon 2 tbsp syrup down the side so it slides to the bottom. Garnish with berries or herbs.
