
I was really excited to try this spiced banana amaro bourbon drink because it sounded unique and it was just as tasty as I hoped it would be. We have some of the spiced banana syrup left and I definitely foresee making more of these!
If you aren’t familiar with amaros, they are bittersweet herbal liqueurs that are made by infusing an alcoholic base, such as a neutral spirit, grape brandy, or wine, with botanical ingredients that include herbs, citrus peels, roots, spices, and flowers. There are many different ones with different flavor profiles. I have a bottle of amaro nonino, which is infused with gentian, saffron, licorice, rhubarb, sweet and bitter orange, tamarind, quassia bark, chinchona bark, and galenga, among other things. It has a really interesting flavor that went really well in this drink.

The first step of this drink is to make the spiced banana syrup, which was super easy. I was a little skeptical that you’d be able to taste the banana in it, but you really could. The syrup is the combined with amaro, bourbon and a bit of lemon juice. This drink had so many layers of flavor and it will be on my repeat list.
Spiced Banana Amaro Bourbon Cocktail
Ingredients
For the drink:
- 1 1/2 oz amaro any amaro of your choice
- 3/4 oz bourbon
- 1/2 oz lemon juice
- 3/4 oz spiced banana syrup
- 1 dash chocolate or other bitters
- egg white or cocktail foam syrup
For the syrup:
- 1 ripe banana
- 1 cup water
- 1 cup sugar
- 5 allspice berries
- 5 whole cloves
- 1 tsp vanilla
- 1/4 tsp nutmeg
Instructions
For the syrup:
- Combine all the syrup ingredients in a sauce pan and heat over medium. Cook, smashing up the banana pieces, until the syrup comes to a boil and the banana is pretty mashed up. Strain through a fine mesh strainer into a mason jar and cool and store in the fridge.
For the drink:
- Combine the ingredients in a cocktail shaker with ice and shake until very cold. Remove the ice, add the egg white or cocktail foam syrup and blend with a milk frother, or shake vigorously until you have a nice amount of foam. Pour into a coupe glass and serve.
