
My family is pretty into sandwiches. We all love them and are happy to eat them often. Old school grinders are one of my favorites, as we used to eat them at my grandma’s all the time when I was young. Near and dear to my heart though is a fabulous veggie sandwich. This is my all time favorite type of sandwich to eat.
This version has havarti cheese, lots of avocado and red onion, sprouts, tomato and pepperoncini rings. I used mayo on these but cream cheese would also be great. You could also swap out the pepperoncini for pickles, use microgreens instead of sprouts, and add sun dried tomatoes instead of tomato. I loved this as is though. I used a seeded whole grain bread, but any would work here. These took me about 10 minutes to fully put together, so a super fast meal too.

Havarti Avocado Sandwiches
Ingredients
- 8 bread slices your choice of bread
- 8 slices havarti cheese
- 2 ripe avocados sliced
- sprouts
- mayo
- pepperoncini rings
- 3 roma tomatoes sliced
- 1/2 red onion thinly sliced
Instructions
- Spread mayo on all sides of the bread. Add cheese on each half of the sandwich then top with avocado, sprouts, tomato, red onion and pepperoncini. Close the sandwich and cut in half before serving.
