Chicken Bacon Ranch Wraps

Chicken bacon ranch wraps are a really easy meal that even picky eaters will love. Chicken, bacon and ranch is a classic combo. Add in a little lettuce for freshness and a hint of dijon for extra flavor and you have a winner.

You don’t need to marinate the chicken ahead for this, as little as a few minutes before cooking works. I seasoned thinly sliced chicken breasts with some garlic olive oil, salt, pepper, onion powder, garlic powder, dried parsley, dried dill and dried Italian seasoning for ranch seasoned chicken. It takes only a few minutes in a skillet to cook the thinly sliced meat.

Burrito sized tortillas are layered with a bit of ranch, a bit of dijon, lots of fresh lettuce, shredded cheddar cheese (I used aged cheddar), the super tasty chicken, and then another drizzle of ranch. You could also add sliced scallions or tomatoes to this and that would be great. This recipe took about 20 minutes to pull together, so great for a weeknight meal.

Ingredients
  

  • 4 10-12 inch tortillas or wraps
  • 4 cups green leaf, romaine or other lettuce
  • 3 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp dried italian seasoning
  • 1/2 tsp dried dill
  • 1 cup shredded cheddar cheese
  • 8 strips cooked bacon
  • ranch dressing
  • dijon mustard

Instructions
 

  • Thinly slice the chicken and season with 1 tbsp oil, salt, onion powder, garlic powder, italian seasoning, parsley and dill and some fresh black pepper. Mix well and let sit a few minutes.
  • Heat the other tbsp oil in a skillet over medium heat. Add the chicken and cook, stirring occasionally, until it is cooked through.
  • Cook bacon according to your favorite method. I like to use the oven to do mine.
  • Lay a tortilla out on a large plate. Spread a line of ranch and a line of dijon down the center. Add a layer of lettuce, then cheese and bacon. Top with chicken and then with another drizzle of ranch. Roll up one side of the tortilla half way, then fold in the sides and keep rolling until you have a wrap.
  • Cut in half and serve.
