Rotisserie chicken salad with ginger orange dressing has tender rotisserie chicken layered over a colorful mix of shredded kale, cabbage, and carrots, with fresh cilantro, scallions, and creamy avocado for balance. A drizzle of ginger orange dressing with garlic and sesame ties it all together with sweet, tangy, and nutty notes. This healthy salad is packed with flavors!

This recipe is inspired by one I saw on Half Baked Harvest. I love all her recipes as they are health focused but don’t skimp on flavor. I was looking for a quick weeknight recipe and this one fit the fill. Using rotisserie chicken makes this recipe super easy. You could also sub chicken breasts or a whole chicken you roasted or poached if you’d like. I also used a bag of coleslaw mix for the cabbage/carrots to save time.

This Asian leaning ginger orange dressing is really tasty and I will use it again in the future. Sesame oil and rice vinegar are two constant staples in my house and I’d like to suggest you keep them in yours as well. 🙂 They are so versatile and add great flavor to many dishes. Rotisserie Chicken Salad with Ginger Orange Dressing

Easy, healthy and delicious salad with rotisserie chicken, kale, cabbage, carrots, scallions, cilantro and ginger orange dressing

Ingredients
  

For the dressing:

  • 1/4 cup toasted sesame oil
  • 2 tbsp honey
  • 1/2 cup fresh OJ
  • 3 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger minced
  • 1 garlic clove minced
  • 1/4 tsp turmeric
  • salt and pepper to taste

For the salad:

  • 1 rotisserie chicken meat shredded
  • 1 package coleslaw mix or 3 cups shredded cabbage
  • 2 cups shredded kale
  • 1 cup shredded carrots if not using coleslaw mix
  • 1 jalapeno minced
  • 1-2 ripe avocados diced
  • 1 cup cilantro leaves
  • 1 cup scallions sliced on the bias
  • 2 cups crispy onion strings store bought or make your own by frying thinly sliced onions

Instructions
 

  • For the dressing – mix all ingredients and whisk well. Taste and adjust salt, pepper, vinegar and OJ as needed.
  • Combine the salad ingredients other than the onion straws in a large bowl and toss. Drizzle with the dressing then toss well again. Top with onion straws and serve heaping plates or bowls of this tasty salad.
