Chicken Spiedies

Has anyone grown up eating spiedies? I never heard of these sandwiches until about 5 years ago when I heard someone mention them and looked them up. They consist of cubes of meat, marinated in lemon and herbs, served on a roll. Apparently the origin of the name is highly contested, but seems likely to be derived from the Italian word for skewer since the meat is often cooked on one. We’ve only tried chicken spiedies but other meat can be used too.

This recipe has very few ingredients but the combination of lemon and herb chicken, a chewy roll, and garlic sauce is super delicious. You really do want to marinate the meat overnight for this recipe. It makes all difference to have flavorful chicken in this sandwich. The marinade is a simple mix of lemon juice, olive oil, parsley, cilantro, salt and pepper. I add garlic too for extra flavor.

I think my sandwich rolls are the perfect bread for this, but any deli roll that is fairly sturdy will work great. The garlic sauce is super easy to make too. It is just mayo, chopped garlic, a little lemon juice and salt. These are a great weeknight meal because they take about 15 minutes total to make if you’ve marinated your chicken the day before. Hope you enjoy!
