Golden Garlic Fried Rice

I made this golden garlic fried rice to go with the Crying Tiger Steak I posted yesterday. This is a variation on fried rice that lightly fries thinly sliced garlic and then uses that garlic oil to fry the rice. The garlic chips are added back into the rice at the end. I also added in some egg and scallions to round out the fried rice.

If you love garlic, this is a great fried rice for you. It is simple to prepare and has great garlic flavor. I use a little garlic slicer to get nice thin garlic slices, but you can also just cut with a knife or even used chopped garlic if you’d rather not deal with the slices. If you have (or are in the market for) a wok, they make cooking fried rice SO easy. I love mine and use it for so many things.

One tip for making fried rice, make your rice at least a few hours ahead so it has time to cool before you fry it. If you make it a day ahead an store in the fridge that also works too. 🙂

Golden Garlic Fried Rice

Fried rice with golden garlic, egg and scallions

Ingredients
  

  • oil for frying I use canola
  • 2-3 cups cool rice
  • 3 large eggs
  • salt to taste
  • 10-20 garlic cloves thinly sliced
  • 6 scallions sliced

Instructions
 

  • Place 3-4 tbsp of oil in your wok or non stick skilled over medium heat. Add the sliced garlic and fry gently until it is lightly golden brown. Use a strainer to remove it from the oil onto paper towels, leaving the oil in the pan.
  • Over medium heat, whisk the eggs with a tbsp of water and a pinch of salt and add to the oil. Stir fry them lightly until cooked then remove to a plate, leaving oil in the pan.
    Heat the pan over high heat until very hot. Add extra oil if there isn't much left. Add the rice and break it up and stir occasionally so it get nice and crispy in areas but not burnt. Season with salt to taste. Add in the eggs, scallions and more salt if needed and toss. Serve topped with the golden garlic you reserved.
