Chicken Spiedies

Has anyone grown up eating spiedies? I never heard of these sandwiches until about 5 years ago when I heard someone mention them and looked them up. They consist of cubes of meat, marinated in lemon and herbs, served on a roll. Apparently the origin of the name is highly contested, but seems likely to be derived from the Italian word for skewer since the meat is often cooked on one. We’ve only tried chicken spiedies but other meat can be used too.

This recipe has very few ingredients but the combination of lemon and herb chicken, a chewy roll, and garlic sauce is super delicious. You really do want to marinate the meat overnight for this recipe. It makes all difference to have flavorful chicken in this sandwich. The marinade is a simple mix of lemon juice, olive oil, parsley, cilantro, salt and pepper. I add garlic too for extra flavor.

I think my sandwich rolls are the perfect bread for this, but any deli roll that is fairly sturdy will work great. The garlic sauce is super easy to make too. It is just mayo, chopped garlic, a little lemon juice and salt. These are a great weeknight meal because they take about 15 minutes total to make if you’ve marinated your chicken the day before. Ingredients
  

For the chicken:

  • 3 large boneless chicken breasts cubed
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup cilantro chopped
  • 1/4 cup parsley chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp pepper

For the garlic sauce:

  • 1 cup mayo
  • juice of one lemon
  • 2 cloves garlic minced
  • salt and pepper to taste

To serve:

  • 4 sandwich rolls
  • 2 tbsp butter

Instructions
 

For the chicken:

  • Combine the marinade ingredients in a ziploc bag and add the cubed chicken. Mix well and place in the fridge overnight.
  • Heat a couple tbsp of oil in a frying pan over medium heat. When it is hot, add the chicken. Cook, stirring occasionally until golden brown and cooked through.

For the mayo:

  • Combine the ingredients in a bowl and allow to sit while you finish the sandwiches.

For the sandwiches:

  • Melt the butter in a skillet over medium and add the cut rolls to toast the insides lightly. Fill with the cooked chicken and drizzle with garlic sauce. Yum!
