
Since we raise chickens, we eat a lot of eggs. A fried egg sandwich is pretty darn good, and I loved this version with crisped up mortadella, cheese, arugula and pesto. I have never fried mortadella before, and love it in its normal state, but it was pretty good crispy too. The pesto really added flavor here, and I keep adding more as I ate.
These were soooo fast to make and I used my favorite sandwich rolls from the freezer for the bread, but you can use any rolls you like. You can also make your own pesto, which is really easy, but my grocery store has a great fresh pesto they make, so I used that. You can make these for dinner in about 15-20 minutes, so they are a great option when you are pressed for time.

Fried Egg and Mortadella Sandwich with Pesto
Ingredients
- 4 sandwich rolls toasted
- 4 eggs
- 4 slices mozzarella or other cheese
- 8 slices mortadella
- pesto sauce
- arugula
Instructions
- Toast the cut sides of the rolls and spread with a little pesto. Add the cheese. In a skillet over medium high heat, fry the 8 slices of mortadella until slightly crispy, then place 2 on each roll. Wipe the pan and reheat with a little oil. Fry 4 eggs sprinkled with salt to your preferred doneness. I did them with runny yolks. Add the eggs to the sandwiches and top with some pesto and arugula. Serve with extra pesto.
